Best Ever Banana Bread
(makes 6 mini or 2 lg loaves)
**Sour cream is the secret to the most moist banana bread. MMM MMM MMM!
1 cup margarine For lower fat you can even use applesauce to replace 1/2 of the margarine)
2 cups white sugar
4 eggs
2 tsp vanilla
3 cups white flour
2 tsp baking soda
1 tsp salt1 cup sour cream
1 cup walnuts (optional)
4 -5 medium bananas
Preheat oven to 350. Grease loaf pans. (You may grease and sugar pans. They come out with a yummy crust) In a large bowl combine melted butter and sugar. Add eggs and vanilla. Mix well. Combine flour, baking soda salt and stir it into the butter mixture until smooth. Fold in sour cream and bananas. Spread into greased and sugared or greased and floured pans. The sugar makes a yummy crust.Bake at 350 for 60 min for lg loafs and ~30 min for small loaves or until a toothpick inserted comes out clean. Cool for 5 minutes then pour out and cool completely.
(TIP: If you go through bananas as fast as I do sometimes they go brown before I have used them all. I just put them into the freezer until I have enough to make bread then I defrost them on a plate for about an hour before making the bread.) They are wonderful in the bread. They add such a great sweet intense banana taste to the bread. Just squeeze out the banana and mix into the bread mixture as usual.
